The Butcher BBQ Stand

 

Take the storied Route 66 east to Wellston, Oklahoma, and you’ll come upon a barbeque joint that’s nearly as legendary as the Mother Road itself: The Butcher BBQ Stand. Here, a father-and-son team continue crafting their award-winning competition meats for hungry travelers Friday through Sunday, year-round.

Try Butcher’s once, and you’ll see why the restaurant has been named grand and reserve grand champions close to 100 times; they’ve accumulated hundreds of first-place ribbons, were named 2012 World Food Champions in Las Vegas and have taken the top prize for sauce and pork at the Jack Daniel’s World Invitational. They’ve even been on the Destination America show “BBQ Pitmasters” twice.

Owner Levi Bouska learned the butchering ropes from his dad, David, who picked up the trade at age 15. In a video interview with Oklahoma Living, Bouska recalls standing on a milk crate as a kid, throwing steer bull meat into a grinder to make hamburgers. Both he and his dad were born and raised in Wellston, and Bouska says it was his goal to make Butcher’s a must-stop Oklahoma destination (we think he’s achieved that).

The set-up for Butcher’s is unassuming; an old rail car has been converted into a smoker, and picnic tables line the lawn in preparation for a family-style feast (they’re dog-friendly, too). The restaurant famously serves up its popular burnt ends, ribs, apple pie BBQ beans and other delicacies until all ingredients are gone as they cook at the maximum capacity their smoker will hold. Once they’re sold out, they close up shop. We suggest arriving early to queue—in the summer, it could be upwards of 30 people deep.

The “meat candy” burnt ends and the St. Louis ribs are the most popular menu items, but Butcher’s also does juicy brisket, pulled pork, smoked sausage and chicken nuggets. Blue ribbons on the menu note the award-winning offerings. But no meal is complete without one of their tasty sides, includes mac-n-cheese, potato salad, chips, coleslaw and the aforementioned apple pie BBQ beans. Dessert options? Twinkies for a dollar.
